ARAN SOID Eireann. (Irish Soda Bread).

Step 1. + Put two
cups of raisins in a bowl, soak them overnight in water, or give them 2 minutes in a microwave oven. (Set step 1. aside.)
Step 2. Mix 1 cup of
sour cream wiith 1 ¼ cups of buttermilk (buy powdered for convenience.)

large eggs (whisked)

cup of honey (or see about sugar, below). (Set step 2. aside also)
Step 3. Mix the
following:
½ cup of fine granulated cane sugar.(instead of honey as
above).

cups of All Purpose (unbleached) white flour

cups of whole wheat flour

teaspoon of salt

teaspoon Baking Soda

teaspoons of Baking powder

Tablespoons Golden Flaxseeds

Tablespoons Ginger

Tablespoons Caraway Seeds

Tablespoons Fenugreek Powder
After you have mixed Step 3 thoroughly, (no
white flour is showing throughout the mixture) add in the drained off Raisins, and
mix well again (set aside the Raisen juice, you may need it later). Set your
oven to 350 and while it is heating up, add in; Step 2 and mix well again. If the mixture appears too dry, add in a
little of the Raisin juice and mix until you obtain a smooth paste. Take a cast
iron skillet frying pan and spray it with Pam Olive oil. Pour or ladle your
prepared bread mixture into the pan. When oven indicates it has reached the
full 350 degree, Insert the pan near the top of the oven, allowing room for the
bread to rise. Set your oven timer for 75 Minutes. If you do not have an
automatic oven, stay within sound of the timer.
