Banana Bread
2 cups (16 ounces, i.e. 4 or 5) of very ripe bananas,
mashed.
½ Cup (3.5 ounces) light Olive oil.
1 Cup (8 ounces or 2 Tablespoons) Sugar
2 large eggs
3 Tablespoons (1.5 ounces) milk.
1 teaspoon of Vanilla Extract
1 Cup(4 ounces) King Arthur Whole Wheat Flour
1 Cup (4 ounces) King Arthur All Purpose Flour (Unbleached)
1 teaspoon Baking Soda
2 teaspoon Baking Powder.
½ teaspoon Salt
1 cup (2 ounces) of chopped walnuts.
Mix: 1 teaspoon ground cinnamon and 2 Tablespoons (8 ounces)
Sugar. Set this mixture aside.
Grease and Flour a 9 x 5 loaf pan. Then, preheat the oven to 350F.
In a large bowl, mash the bananas; add the Olive oil, Sugar,
Milk and Vanilla Extract. Stir to
combine.
Mix in the Flours, Baking Soda, Baking Powder, Salt and
chopped Walnuts. Scrape the bottom and
sides of the bowl, to thoroughly combine all ingredients.
Transfer the batter into the prepared pan. Then sprinkle the
Sugar and Cinnamon mix over the batter.
Bake 60 minutes in preheated oven, or until tester inserted
in the middle comes out clean.
Cool in pan for 10 minutes, then tip out onto rack, to cool completely. Enjoy!
